Estate Argyros, opgericht in 1903, is een van de meest gerenommeerde wijnhuizen op Santorini. De familie Argyros beheert wijngaarden met eeuwenoude, ongeënte Assyrtiko-stokken, die diep wortelen in de vulkanische bodem van het eiland. Deze unieke terroir, gecombineerd met de droge, winderige omstandigheden, draagt bij aan de kenmerkende mineraliteit en hoge zuurgraad van de Assyrtiko-druif.
De Cuvée Evdemon is een topcuvée, afkomstig van speciaal geselecteerde percelen met oude wijnstokken die een lage opbrengst en uitzonderlijke concentratie leveren. De vinificatie vindt plaats met respect voor het fruit, vaak met rijping op de gistfijnen om de textuur en complexiteit te vergroten. Dit resulteert in een wijn met een indrukwekkend aromatisch profiel, gekenmerkt door citrus, peer, honing, en een duidelijke rokerige, minerale toets.
In de mond toont de wijn een formidabele structuur met knisperende zuren en een ziltige mineraliteit die de smaakpapillen prikkelt. De lange, intense afdronk benadrukt de diepte en het bewaarpotentieel. Deze wijn is een uitstekende begeleider van zeevruchten, gegrilde vis of rijke gevogeltegerechten, en kan zich nog vele jaren ontwikkelen.

The name Evdemon is derived from "good spirit" or "good demon." With fruit from the winery's highest-elevation fruit, at 250 meters above sea level, the Estate Argyros 2020 Santorini Assyrtiko Cuvee Evdemon comes from a windswept site with 160-, 180- and even 200-year-old vines. The drawing on the front label shows mules used in farming. If Monsignori delivers a more delicate side of Assyrtiko, Evdemon is a beast in comparison. The wine ages on the lees for 30 months with bâtonnage, and 25% of the wine sees oak (including some Stockinger barrels). "This wine reassures us in our decision to make single-vineyard wines," says Director Dimitris Motsos. They use an optical sorter to make sure the fruit is pristine, and they make every effort to remove any varieties that are not Assyrtiko. The wine offers a firm mouthfeel and bigger structure for sure, with pronounced salinity that is especially present in the wine's taste profile (more so than the bouquet). The wine's pH is very low at 2.9. Those mineral tones are followed by subtle softness with lemon cream and acacia honey. This is a bottle to put aside for a few more years.

From their two oldest vineyards, which are farmed according to the phases of the moon. Fermented in tank, 25% matured for 12 months in oak, the rest 30 months in tank on lees. TA 7.1 g/l, pH 3.07, RS 2.6 g/l.
Very pale gold. Showing the extra bottle age in a cedary/herbal aroma. Spicy, too. Immense concentration, mouth-filling but not heavy. You can feel that tiny bit of residual sweetness in the roundness partly created by the alcohol but it is neither heavy nor hot on the finish. Very high acidity is hidden by the richness and complexity. 'Darker' gold aroma than the Karamolegas Kamaras. Alliance of power and freshness. Spicy persistence and still there is some saltiness on the finish. This is impressive but for drinking, I prefer the Kamaras.
