The 2021 Bishop Shiraz is pristine, supple and concentrated. There are layers of mulberry, raspberry and salted licorice (red licorice, too) in the mouth, shaped by fine, pliable tannins. It is bendy like high-jump poles. This is really great value for money. It is reliably high quality, delivering a modern, satisfying Barossa experience. What more do you want?

After some challenging vintages the Celtic gods smiled upon the Barossa and you can see that joyous effect in the mild conditions that brought forth the best of this old vine material. This is 35- to 120-year-old Shiraz vines in the Ebenezer subdistrict. Matured for 16 months in a mix of 40% new oak and 60% seasoned French hogsheads. Juniper, black cherry and dark plums meet with black forest cake, soft licorice and cassia bark. The tannins are fine and silky with dark bitter chocolate and black peppercorn that showcases the Northern arena. A wine that really delivers both in fruit weight and fine structure for a minimal price tag. Drink with juicy lamb cutlets dipped into red wine jus with your fists just like a Norse-Gaels vikings.
